One of
my favorite dish which my mother likes to make is
called "sambal lingkung". Traditionally it was made
by "roasting" grated coconut mixed with spices,
chili, and a special kind of fish ("ikan
tenggiri").
I am
not sure where my mother had learned
her recipe or how to make
this delicious ethnic dish, but hers is the
best.
When my mother was a little child her
mother passed away. She was raised by her
grandmother. I think it was
her grandmother who had taught her how to make
this delicious food.
I have revised
her recipe and used tempeh, onion,
garlic, chili, anchovy fish. I had shared
my
sambal with my friends, colleagues and relatives
and they all screamed,
"Wow, it is
delicious!"
