
What is Tempeh Pepes? Tempeh "pepes" is tempeh wrapped in a banana leaf and roasted or baked.
Ingredients: 1 block of good tasting tempeh (10 oz.)
3 green onions, chopped or thinly sliced
6 pieces of candlenuts (kemiri), roasted
briefly and smashed/ground
1 stalk lemon grass, crushed
1 cup of cilantro leaves
2 jalapenos, sliced
5 shallots, chopped
1 tsp of ground cumin
1 tsp salt
Preparation: Crumble the tempeh in a bowl with your fingers into smaller pieces
Add the remaining ingredients and mix well
Add seasoned salt if you like a spicier tempeh
Wrap the tempeh in banana leaves, and you may use foil paper to
cover over the leaves.
Pre-heat the oven to 300°F, bake for 10-15 minutes, and turn the tempeh once.
Serve warm, and enjoy.
