Peuyeum, or peyeum Bandung, is cassava or yucca root fermented with "ragi tape" (tapeh starter). Tapeh is the traditional food of choice that can fill the stomach and quickly provide the calories (energy) needed by the body. Tapeh can also be made from black glutinous rice and white glutinous rice (sticky rice) besides cassava or yucca root.
Good cassava tapeh tastes sweet and has a wonderful flavor. "Tape ketan hitam", or fermented black glutinous rice is high in vitamins and minerals. Fermented black glutinous rice is often consumed by women who have just given birth to a child.
